It’s customary to bring a little something, something for the host, especially for a special family gathering. With Easter coming right up (day after tomorrow) and you find yourself in a bind, here’s a quick and easy recipe you can make with your pantry essentials: Mini Olive Oil Cakes with Lemon Glaze.
They’re sweet, tart and seriously good with coffee/tea.
I did use dried thyme as I didn’t have fresh and the square mini loaf pans so it’s my version of lemon squares.
I then drizzled the lemon glaze right on top.
